Two things I really love… Manicotti and sauce made with fresh from the farm yellow Roma tomatoes!
I was originally going to make a lasagna. So I thought “what meat would go well with the light colored sauce?” beef or turkey would be too heavy and I opted on ground chicken. Then I decided to change to Manicotti and was like well? Manicotti doesn’t usually have meat. but I have to tell you it was awesome. The chicken helped to give body to the pasta. As many of you have experienced the go in the oven big and stuffed and finish flat and empty. The meat definitely helped with that!
