Ya’know.. my mother never made this when I was little. Not sure if maybe it just was that it takes time and watching to cook. She had 6 of us running around! And she was cooking for 8 everyday. Not sure.. I’ll have to ask my sisters.
Now as for me, I enjoy a good risotto over most other foods. I love all things rice, but wether simple or complex, there is something about the texture and richness that only a risotto brings. Add meat? Sure! Mushrooms or asparagus? Well that works for me as well! It just lends itself as a base to so many options
I made this risotto on a warm summer evening and served it with a salad. On that occasion risotto took center stage. However on a cold winter night risotto as a side works well too. Either way, it always makes the meal better.
